I'm going to try substituting applesauce for oil in my baked goodies. Does anyone have some good recipes they'd like to share?
From what I've read, a general rule is to use half as much applesauce as you would oil and to retain some oil in the recipe (two tablespoons).
I have a really good cornbread recipe that uses applesauce. It is from Dr. Dean Ornish's book for reversing heart disease, so it is very healthy!

1 cup flour
1 cup yellow cornmeal
2 tbsp sugar (I use a little sweetener)
2 tsp baking powder
1 tsp salt (I omit this)
1 cup nonfat milk
1/4 cup unsw. applesauce
2 egg whites
Preheat to 425. Spray 8 inch pan. In medium bowl, stir together flour, cornmeal, sugar, baking powder, and salt. In large bowl, whisk together milk, applesauce, and egg whites.
Add dry ingredients to liquid ones. Stir lightly just to blend. Pour into pan and make until top lightly browned. About 20 minutes.
